三 | 　　正是因为陕西人对面食的热爱，大街小巷随处可见的面馆，早已成了西安城的“标配”。今年50岁的朱涛从1993年开始就经营着一家油泼面馆。

四 | 据了解，朱涛祖辈都是制面手艺人，在祖辈的言传身教下，他始终坚守古法制面，其店内的“尚寨油泼面制作技艺”，在2025年被评为陕西省非物质文化遗产代表性项目。图为朱涛制作油泼面。　张煜晨 摄　　“一碗合格的油泼面，背后要历经选料、和面、擀面等二十多道工序，每一步都凝聚着祖辈传下来的智慧与经验，也深藏着陕西人那份难以割舍的浓浓乡愁。这不仅仅是做一碗面，更是延续一种传统、一份记忆。”朱涛表示，这么多年来，自己始终坚守制面初心，绝不偷工减料，也从不投机取巧走捷径。就是想守住最正宗、最本真的“老陕”味道。　　据悉，凭借数十年的制面经验，朱涛对传统制面工艺做了系统性梳理。他将制面工序量化管理，制定出一套“专属企业标准”，保证店内出品的每一碗面，从形态到风味都高度统一、口感稳定出色，让这份非遗美味始终如一地呈现在每一位顾客面前。图为油泼面。　张煜晨 摄　　“以前老手艺全靠经验拿捏，水温、面粉、揉面时长、醒面时间，全凭手感，不同人做出来的味道难免有差异。我花了多年时间，把每一道制面工序拆解、量化，固定好配比和流程，把经验变成标准。这样既能守住古法的精髓，又能保证味道的一致性。”朱涛说。　　记者在朱涛的面馆看到，整个门店特意被设计成了关中农家风格。从屋内的青砖灰瓦、大红灯笼，到摆放的木质桌椅与粗瓷碗碟，处处都洋溢着浓郁的乡土气息，再搭配标志性的特色大老碗，让每一位进店顾客在品尝美食的同时，也能直观感受到厚重的关中饮食文化与淳朴的民俗风情。

五 | 　　“这家店铺不光面的味道正宗，环境也特别有‘老陕’的感觉。坐在这儿捧着大老碗吃面，不光有‘烟火气’，更能感受到关中地区的民俗氛围。”面馆顾客高润发说，能吃到非遗手艺做出来的面，感觉特别地道，值得推荐。　　近年来，朱涛始终把收徒传艺作为自己的核心工作之一，他希望通过系统细致的传授，将这门历经几代人打磨传承的制面技艺，完整交到更多有志于此的年轻人手中，让这碗凝聚着关中大地“烟火气”与人文记忆的非遗味道，不仅能被更多人知晓喜爱，更能在未来岁月里持续飘香、生生不息。(梅镱泷 张煜晨) 。
